    Fired up the smoker to make ribs for my wife. Both kids are coming today. Weather is perfect. Pics will tell the tale.

    Binder on, then our favorite rub.

    8:30- 12 on smoke. Just wrapped in foil on a bed of brown sugar and pats of butter, then apple juice concentrate on top. Timer set for 2 hours.

    250-275 as best I can.

    Sauced up the rack and back in for an hour. For that I try for 200-225.

    Intrigued by the apple juice concentrate. This is a new wrinkle to me. Is it the frozen concentrate or something else? More info please.

    Yes, it’s the stuff you get frozen in a plastic “can”. I let it thaw of course but just pour some into the foil making sure it stays there. Adds an apple flavor profile that isn’t dominant.

    Thanks, I will definitely try this! Pork, in particular, benefits from sweet or fruity accents.
